Soups and the HCG Diet


While on phase II of the HCG Diet, it can be really easy to keep the meals pretty boring.  I have patients who live on chicken breast and broccoli for the entire time.  For those that like a little variety, I assure you that it is rather amazing all of the wonderful dishes that can be prepared with the simple list of foods on the phase II HCG Diet Protocol.


I love experimenting with these recipes and feed them to my huband and two little boys (ages 2 and 5) all the time.  This blog post is a reminder of the delicious meal a simple soup can make.  Soups can also come in a variety of flavors and textures and they are a great way to mix up a meal plan.  Soups also keep well and can even be frozen for a dinner to come.


Here are a few of my Favorite HCG Diet Phase II Friendly Soup Recipes



Ingredients needed for this amazing dish:

  • 3.5 ounces of chicken breast cut into cubes
  • 3/4  cup of celery, chopped
  • 1/4 cup tomato, chopped
  • 1 cup cabbage, chopped
  • 2 cups low sodium, organic chicken broth
  • 1 tbsp. minced onion
  • 2 cloves minced garlic
  • 1 bay leaf
  • 1/2 tsp poultry spice blend
  • cayenne, salt and pepper to taste

First, bring the chicken stock to a boil and then add onion, garlic and spices.  Add in the chicken and veggies and then simmer on low heat for 20 -25 minutes. Serve warm and Enjoy.  This recipe makes 1 serving but feel free to double it as many times as you need to make more portions.




What you will need:

  • 3.5 ounces of shrimp
  • 2 cups of low sodium, organic vegetable broth
  • juice of 1/2 lemon with rind
  • 1 stalk of lemongrass
  • 3 slices of fresh ginger, grated
  • red pepper flakes to taste
  • 1 tbsp green onion
  • 1 tbsp cilantro
  • salt and pepper to taste

What to do:

Bring the broth to a gentle boil and add ginger, lemongrass, lemon juice, onion and pepper.  Simmer for 15 minutes.  Then, add the shrimp and cilantro and let the mixture cook for another 5-10 minutes.  Remove lemon grass before serving it up!  Enjoy.  Again, this is for one serving.  Feel free to increase ingredients to make more.
