Chocolate Coconut Balls -- A deliciously, decadent dessert for HCG Diet Phase III

 

I have been facilitating the HCG Diet now for almost 10 years and just this week I was introduced to this truly amazing HCG Diet phase III desert by a patient.  I made it for my husband and children over the weekend and it really was awesome.  I had to share it.  This is a desert tha is good for anyone. It is easy to make. It is low carb. It has no sugar. It is not processed. It is delicious and HCG Diet phase III friendly!

 

I can almost promise you that if you are an HCG Dieter this will be one of the best snacks you will make!

 

Ingredients in this Delicious HCG Diet Treat

  • 1 cup unsweetened, shredded coconut
  • 1 packet of pure stevia or 6 drops liquid stevia
  • 1 teaspoon vanilla extract
  • 1/3 cup organic coconut cream
  • 3 tablespoons coconut oil
  • 2 tbsp unsweetened cocoa powder
  • Optional:  I added 4 tbsp goji berries; 1/4 cup pecans; 1/4 cup hemp seeds to the coconut mixture in my second batch that I made and it was amazing.
Directions to put this HCG Diet Treat Together
 

Begin by mixing the coconut flakes, coconut cream; 1/2 tsp vanilla; 1/2 packet of stevia together and mix together really well.  This is where you would add in the optional add ins if you so desired. You could also get creative and use the original mixture with some drops of peppermint oil and make this into a "peppermint patty."

 

Once the mixture is well mixed -- place it on a parchment paper lined baking sheet. You can shape the pieces into bars or into little balls.  Place these into the freezer for a couple of hours.

 

Create the chocolate covering by  mixing on low heat the coconut oil, raw cacao powder, 1/2 tsp vanilla and 1/2 packet of stevia.  Mix well and let cool to room temp.

 

When "coconut mixture"is hardened after being in freezer for a couple of hours you can take it out and cover the bars or balls with chocolate.  Place back in freezer for the chocolate to harden up.

 

I find that these taste best when served at refridgeator temperature.
