Pancakes that Work on a Clean Diet Program

 

For as clean & healthy as these pancakes are ...  they are also super tasty.  My kids even love them. I made them this morning and they gobbled them up with enthusiasm before pre-school.  With such a short list of ingredients, they take just moments to whip up. You can even save them in the fridge and toast them the next day.  It is always nice to have an easy, healthy and fun breakfast option!  These are also a really nice treat for phase III of the HCG Diet Program.  My patients get excited when I share this recipe.

 

Making the Healthy Pancakes ... It is pretty darn simple!

 

The ingredients you will need are 1 cup organic, raw cashews, 2 eggs, 1/2 tsp baking powder, 10 drops stevia (I used the vanilla creme flavor), 1 tsp vanilla.  Yup, that is all folks.  Just place these ingredients in a blender and blend it up.  You can also add 1/4 cup vanilla protein powder. I like the sun warrior protein powder as it is minimally processed and has a great macro-nutrient profile.  You can throw in some chocolate chips if you want to add some decadence too.

 

Place about 1/4 cup of the blended mix onto your greased pan and make them as you would a traditional pancake.  At our house, I cook down blueberries and water and add some stevia or yacon for "syrup."  If you are not on a specific diet that asks you to keep your sugar intake low you can go for some pure maple syrup.
