Phase III HCG Diet Colorful Dinner Salad


I made this salad on Sunday evening for my family!  I saw it in a magazine and decided to altar it a bit to make it suitable for my phase III HCG Diet patients.  The corn is a bit on the starchy side for P3 but this minimal amount per serving would be okay!  The salad was colorful, easy and fun to make.  We added an ounce or two of white fish to ours which made for a very balanced meal!  It was even delicious left over the next day.  There are a few modifications to the recipe as well ... especially for those who are not on a dietary program.   I wanted to share this recipe with all of YOU!


What you need to make this P3 HCG Diet Salad Delight


You will need to gather a whole lot of vegetables to make the salad (please choose organic if you can) ~ 1 pint cherry tomatoes, 1/2 avocado, 1 can of black beans or garbanzo beans (omit on phase III); 5 chopped green onions; 1 orange bell pepper2 ears of corn with kernals removed (use only 1 ear of corn on P3) ; 5 carrots (use only 2 carrots on P3), 1 large head of romaine lettuce. 


For the dressing, you will need 1/4 cup olive oil; 2-3  tbsp fresh lime juice; 1/3 avocado or 1/3 cup low fat greek yogurt; 3 cloves of garlic; 2 tsp apple cider vinegar, salt and pepper to taste. 


Putting this HCG Diet P3 Salad Together


You will need to chop all of the vegetables really small and mix them together.  Place all of the salad dressing ingredients in a blender and blend until smooth and creamy.  Mix this into the salad and enjoy!
