Delicious Roasted Strawberry Coconut Ice Cream - HCG Diet P3 Friendly

The strawberries this time of year are divine.  I keep sugar fairly low in my diet and I thoroughly enjoy having a couple of these little morsels here and there.  They are so tasty and delicious and really have such a short season.  I find that other strawberries that you buy throughout the year to have very little flavor. I  try to buy a carton on most days I am at the store and freeze what we do not eat that day as they are so fresh, they are fairly perishable.  Frozen strawberries are a great thing to add to the smoothies I make for my kids and they surely hold their flavor.


This weekend, I made this amazing "ice cream" for my kids after they begged for me to take them to Salt and Straw (our local ice cream store).  Wanting to avoid the line and the sugar/dairy fix I decided to whip up some ice cream with a base of coconut milk and the strawberries I had just gotten at the farmers market. I always like to experiment with recipes that can also be used in the phases of the HCG Diet.  This one is perfect for HCG Diet phase III!


Making the Roasted Strawberry Ice Cream

3 cups strawberries (local, organic if you can find them)
1 pinch sea salt
2 cans organic, full fat coconut milk,
1 teaspoon vanilla
1-2 packets of stevia (to taste)

Preheat your oven to 425 degrees and pour the strawberries into a baking dish. Sprinkle the berries with a pinch of salt and toss. Roast in the oven for about 20-30 minutes. Next, take the berries out of the oven and set aside to cool in the fridge.

As the berries cool, add the coconut milk, vanilla and stevia to the blender.  Blend all together until the mixture is very smooth. Next, empty the blender into the ice cream maker and let it do its thing for 30-45 minutes.  I like to add the roasted strawberries in during the last few minutes and let them get swirled in.  Depending upon your ice cream maker, you may want to transfer it to a dish and let it sit in freezer for 5-10 additional minutes before serving!  This can be served as traditional ice cream or put into popsicle molds.  Keeps well in an airtight container in the fridge!
