Make Your Own Holiday Cheer this Year

Pass right buy that fancy aisle with glimmering holiday packages of processed foods that are meant to tell people "I love you."  Instead, exercise your creativity muscle and make your own little treats for that holiday party or to share with family and friends.  There are so many simple ways to do this that are a lot cleaner and healthier than the processed foods sitting in pretty packages on store shelves. Most of the time, you will find that the ingredients are really a lot of chemicals, dyes and artificial stuff.  Here are some ideas below.  They will not work on our HCG Diet program of course but they are a better option than what you can get at the store most of the time these days. For a little treat this time of year these will make people say ... yum!

Classic Raw Coconut Macaroons will melt in the Mouth

Ingredients for these delightful little morsels
  • 1 c unsweetened shredded coconut flakes
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil
  • ½ c almond flour, feel free to add a bit more for consistency if needed
  • 1 tsp vanilla extract
  • Cocoa powder if you want chocolate macaroons

Place all of these ingredients together in a food processor and pulse until combined. Make little tablespoon sized balls. Place them on a cookie sheet and place in fridge.  If you want, you can dip the chilled macaroons in chocolate for a super tasty  treat!

Delicious Cacao/Nut Crunch

For these, you will need to gather the following ingredients together:
  • 2 tbsp coconut sugar
  • 3 tbsp water
  • ¼ tsp sea salt
  • ½ tsp cinnamon
  • 1 tsp vanilla
  • 1 c almonds or any nut you love
  • 2 tbsp cacao nibs

In a medium sized pan, combine sugar, water, sea salt, cinnamon and vanilla.  Warm this on low/medium heat stirring frequently until sugar is dissolved.  Add int he nuts and keep stirring until the mix is pretty thick and the nuts are coated. This takes 3-6 minutes.  Remove this from the stove and then add in the cacao nibs. Pour onto parchment paper and let it all cool in a single layer.  Store in fridge or at room temp in an airtight glass container. Enjoy!  These also make really nice holiday gifts and can be placed in pretty jars decorated with holiday ribbon!
