A Delicious Phase III Dinner that Keeps on Giving


This recipe was given to me by my Dad.  It was and still is a family favorite.  I am delighted to be able to share it with my HCG Diet patients that are on phase III of the program and for those who are following their own personal maintenance diet. The beautiful thing about this recipe is that it can be frozen in containers and pulled out meal after meal.  I love that.  You can serve it over miracle noodles too!


Chicken Cacciatore Phase III HCG Diet Recipe Ingredients


2 organic, free range fryers

4 large green peppers

2 medium onions

olive oil

24 oz can organic, diced tomatoes (or better yet, make your own by roasting tomatoes)

24 oz. can organic, crushed tomatoes (or make your own)

24 oz. of organic,  tomato sauce or make your own

6 oz. organic, tomato paste

6 cloves of garlic, minced

2 tbsp salt

4 tbsp oregano

1/2 tsp thyme

1/2 tsp black pepper

1 tbsp basil

1.5 cups water


Putting this Phase III HCG Diet Recipe all together

  • Par boil 2 organic free range fryers in water, oil and salt for about 50 minutes or cooked through. Then
    drain the water and let cool.
  • Cut up 3-4 large green peppers and 2 medium onions and lightly stir fry together in a large frying pan
    with olive oil.
  • Make the sauce mixing together one large (24 oz) can of petite diced tomatoes, crushed tomatoes and
    tomato sauce.
  • Then add I very small minced garlic, 2 tablespoons of salt, 4-5 tablespoons of oregano,
    half teaspoon of thyme and half teaspoon of black pepper, 4-5 pinches of basil and one to one and a
    half cup of water.
  • Bring sauce to a slow boil for about an hour.
  • Now add the green peppers and onions and let simmer for 2- 3 hours.
  • Pull chunks of chicken off the cooled roasters and drop them into the sauce. Be sure to pick the
    bones clean. The small pieces/fragments of the chicken will mix well with the sauce.
  • Then add the chicken to the sauce and simmer for another 2-3 hours in order to thicken the sauce
    without having to use tomato paste.
  • Try not to stir the sauce at this point too much so the chunks of
    chicken do not fall apart.
