Try these Lemon Kale Chips on Phase II of your HCG Diet

I am always trying to modify recipes to find snacky, healthy menu items for phase II of the HCG Diet program.  I have always found that kale chips made without a nut based sauce were really not very tasty.  However, last night, I threw together this recipe and it was truly fabulous.  My kids ate them by the hand ful ... all of them and so I just made another batch.  They do have some coconut oil in them, which I find to be okay in small amounts on phase II of the HCG Diet protocol.  Coconut oil is a medium chain triglyceride (which describes the length of the fatty acid chain) and the body prefers to utilize it for energy.  It has shown to be beneficial to metabolism as a whole.  

Ingredients for the P2 Kale Chips Snack

  • 1 bunch organic, kale; washed, stems removed and patted dry
  • 2 tablespoons coconut oil melted
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon sea salt

Creating the Kale Chips for P2 HCG Diet


Begin by preparing the kale ... wash it, pat it dry, remove stems and cut it up into 1 -2 inch pieces. Place the kale in a bowl and massage with lemon juice, oil and salt.(yes ... rub it down for 3-5 minutes).  You can actually even stop here for a delicious kale salad.  If you want to continue on to make the kale chips,  place the massaged kale onto a parchment lined baking sheet and place in a 350 degree oven for 10-15 minutes. Let cool and enjoy!  They will get crispy after cooling.


Remember kale is higher in carbs than other leafy greens.  SO, eat in moderation. On phase II of the HCG Diet, keep your carb intake between 30 and 50 grams daily.
