Paleo Zucchini Bread - P3 HCG Diet Approved!

A Delicious Phase III HCG Diet Treat

 

After receiving so many zucchini this week from patients ... I realized i needed to get creative with it. I love it lightly steamed with stewed tomatoes.  However, I can only have so much of that.  This morning, I threw this recipe together and it worked out beautifully. Since I do spend much of my time as a physician educating patients on dietary wellness and facilitating the HCG Diet , I am always trying out new recipes to share.  
 

Ingredients for the HCG Diet Friendly Zucchini Bread

 

If you are not a fan of stevia (the only sweetner approved on the HCG Diet) you can replace it with a banana with a tbsp of honey.  
  1. 1 cup zucchini, grated - try to get the water out of it by straining it thorugh a nut milk bag
  2. 1 1/2 cups almond flour
  3. 1/4 cup coconut flour
  4. 1 tsp baking soda
  5. 1/2 tsp salt
  6. 3 eggs
  7. 2 tbsp honey
  8. 1 banana, mashed
  9. 1/4 cup coconut oil, melted
  10. 2 tbsp almond butter
  11. 1/2 tsp cinnamon

Putting this Little HCG Diet Friendly Treat Together

  1. Preheat the oven to 350 degrees F. Line a loaf pan with parchment paper or use a silicone loaf pan.  
  2. After shredding the zucchini work to get out the water if it is really watery (some seem more hydrated than others).  I use a nutmilk bag and just give it some squeezes.  
  3. Blend together the almond flour, coconut flour, baking soda, and salt in a medium bowl.
  4. Use a hand blender and in another bowl combine the eggs, stevia, coconut oil, almond butter, and cinnamon. Add the dry ingredients into the wet and stir well.
  5. Next, fold in the shredded zucchini.
  6. Pour the batter into the loaf pan. Bake for 40-50 minutes.  Remove the bread  from the oven and let cool well.
  7. Enjoy!  Enjoy!
