Perfect FALL HCG Diet Dinner

 

I love the crock-pot as you can create very simple meals that will be waiting for you when you get home.  This is a delicious comfort food dinner that all can enjoy.  There will also be left overs for the next day!  This contains grass-fed, free range stew meat with lots of chopped veggies.  It is warming from the inside out.  This is a great HCG Diet P3 Dinner!  You cans serve it on its own or with a nice green salad!

Gathering the Ingredients for this HCG Diet Friendly Dinner

This is one of the quickest dinners I have made.  Outside of some quick vegetable chopping there is not much too it.  You can brown the stew meat prior to putting it in the crock pot or just throw it in.  I have done it both ways and have not much of a difference in flavor or texture to report. 

 

Here is what you will need:

 

  • 2 pounds pastured stewing beef
  • 2 cups of beef or chicken stock (or 1 cup stock and 1 cup wine or beef
  • 1 Tbsp balsamic vinegar
  • 1 medium onion, chopped
  • 2 stalks of celery,  chopped
  • 2  carrots,  chopped
  • 3-4 small potatoes, cubed (optional and not for phase iii)
  •  3 cloves of garlic, minced (go for less if  your taste requires that)
  • 1 Tbsp paprika
  •  3 bay leaves
  •  1/2 tsp salt
  •  1/2 tsp black pepper
  •  1 tsp dried rosemary
  • 1 tsp basil, and oregano
  •  1/8 cup arrowroot powder (if you want to thicken your stew)

Begin by adding the ground beef to the crock pot.  If you would like to brown it before hand you can do that.  Next, add in all of the liquid ingredients and then add in the vegetables and spices.  Please leave the arrowroot powder out until the last steps.Turn the crockpot on low and cook 8 hours.  Then, remove the liquid and put it in a pot on the stove and cook on medium heat stirring often. Turn the heat off.  Next, take about a cup of this liquid and place in a bowl and slowly add in the arrowroot powder to thicken.  Stir constantly until it is thick and well dissolved. Do not heat again. SImply add the ingredients back to the crock pot. Stir it all together and ENJOY!
