The HCG Diet in the Fall

The Fall is a nice season to jump on board the HCG Diet. The gardens are happy and we have lots of fresh fruits and vegetables around.  Apples are ripening on the trees and this is a perfect HCG Diet snack food.  Tomatoes are in the last phase of ripening and they are delicious on the program.  I love harvesting kale, chard and cucumbers this time of year as well.  It is a wonderful season to add warming spices to your meals and make them delicious!

One thing that I really enjoy in the autumn is making soups.  Many of my HCG Diet patients enjoy a nice bowl of soup as well on the program. Here is one of our favorite soup recipes (HCG DIet friendly ... of course). Give it a try!

HCG Diet Friendly Tomato/Basil Soup

Tomato Basil Soup for the HCG Diet

2 cups chicken or vegetable broth that is organic and low sodium; you can also do 1 cup broth + 1 cup water

2 cups chopped fresh tomatoes

3 oz of tomato paste or tomato sauce with no added sodium or sugar

6 leaves of fresh basil sliced

1-2 cloves garlic minced

2 T chopped onion

1 t garlic powder

¼ t dried oregano

Pinch of marjoram

Salt and black pepper to taste

Putting this HCG Diet Friendly Soup All Together

Blend all ingredients well in a high powered blender.  Add to a pan over medium heat and bring to a boil!  Reduce heat and let simmer about 25 minutes. I like to serve this with some fresh basil or cilantro as a garnish.  Enjoy!  This would count as a vegetable serving on the HCG Diet!

Makes 2 servings (1 vegetable)
