HCG DIET Tomato Basil Soup!


This my friends is delicious!  My neighbor brought over some tomatoes and basil from her garden last night and I was delighted. This soup is a favorite with my family and works beautifully on phase 2 of the HCG Diet program Portland along side one of your protein options.
This dish also works great for meal prep as you can make enough for multiple servings. It will hold well in the fridge for 5 days or so.

Ingredients for the HCG Diet Summer Time Soup


  • 2 cups vegetable broth (low sodium, organic)
  • 2 cups of water
  • 1/2 onion
  • 10 basil leaves chopped
  • 6 ounces tomato paste (low sodium)
  • 1 large garden tomato or a 28 ounce can of organic, plum tomatoes (no sugar or salt added)
  • 5 tsp. garlic powder
  • 2 tsp. dried oregano
  • ¼ tsp. red pepper flakes
Creating this Delicious HCG Diet Tomato-Basil Soup
  • In a saucepan, place a small amount of vegetable broth and warm over medium heat.
  • Sautee the onion in the broth and for a few minutes
  • Add the other ingredients and let them all simmer together for 15 minutes on medium-low heat.
  • Let everything cool and you can blend it all up and serve warm.
This recipe should make 4 servings and each serving is between 115-129 calories. This will count as a vegetable serving
