The "Green Taco" Delight for Phase II of the HCG Diet


An HCG Diet patient came into my office today very excited to share her latest creation with me.  This woman has taken the HCG diet protocol to the next level when it comes to cooking.  I am truly inspired by people like her.  I also feel so blessed that she brings me a decadent lunch every week that is full of healthy nutrients.  The foods on Phase II of the HCG Diet can be put together to make some delicious meal plans.  Sometimes, it is nice to have such limited, healthy choices to work with.  I have to say that this recipe was so delicious that I just had to share it.  This dish is warm and savory and takes only 15 minutes to put together.


Ingredients in this Warm, Delicious Phase II Kale Taco
  •  ½ onion chopped
  • 2 garlic cloves, minced
  • 1 tbsp apple cider vinegar
  • ½ head of purple cabbage
  • 1 bunch kale
  • ¼ tsp himalayan sea salt
  • 1 tbsp. stone ground mustard
  • 3.5 ounces cooked chicken breast cut into small pieces
  • 1 large tomato seeded and diced
  • 2 cups sprouts
  • 1 lime cut into slices
  • 5 collard leaves
Instructions for this Phase II HCG Diet Delight
  1. In a medium fry pan place a small amount of water and add collard greens ... lightly steam for 3 minutes.
  2. In a pan, sautee onion in a small amount of water for 3 minutes; add garlic cloves and cook 1 more minute
  3. Add the cabbage, salt & pepper, apple cider vinegar and stone ground mustard and stir. Cook covered for 3-4 more minutes
  4. Add kale and cook another 2 minutes
  5. Place collards between 2 paper towels or 2 cloths to get water out; let chill for a few minutes in the fridge.
  6. Create tacos by putting the kale and cabbage mixture on a collard wrap, topped with diced tomato, diced chicken, sprouts and a little lime.
