Creamy Tomato Soup for Phase 2 HCG Diet


I love some tomato soup and I never would have imagined that one could be made for phase 2 of the HCG Diet that tastes so delicious.  There is a secret ingredient in there that may seem really strange to some.  However, on the HCG Diet many people get quite creative.  The secret ingredient here is a protein source ... low fat, organic cottage cheese!  Yes! It is incredible what cottage cheese can do for thickness and depth in our meals. It is a great bio available protein source!  If you do okay with dairy give this recipe a try.


Putting this HCG Diet friendly Tomato Soup Together


First, find a clean, low sodium tomato soup for the base. My favorite is the marinara by Cucina Antica.  Place about 1/2 to 1 cup of sauce in a blender and add 1/2 cup cottage cheese.  Blend well. On the stove, bring 1/4-1/2 cup of low sodium, chicken broth to a boil. Turn it to a simmer and add the blended tomato/cottage.  cheese.  Spruce it up with salt, pepper, paprika, cilantro or anything p2 HCG Diet friendly that you enjoy!


With this HCG Diet friendly meal you get one serving of protein (cottage cheese) and one serving of vegetable (tomato). Some might also add a vegetable serving to the soup and then count the tomato as a fruit serving.

The cottage cheese can be blended into an asparagus soup as well. This is delightful. I have also tried it blended in with puree steamed broccoli, spinach and cauliflower!
