Getting Creative with HCG Diet Phase 2 Foods

 

The other day, I was cooking broccoli for dinner.  The particular broccoli I was using that evening had unusually long stalks.  I enjoy the stalks but my kids will not touch them. I had the mandolin out for some carrots I had been cutting so I decided to cut up the broccoli stalks into very thin slices. I thought I would try to make "chips" with them and see what happens.  Experimenting with food is one of my favorite things to do! I love experimenting with HCG Diet friendly foods so that I can have things to share with my HCG Diet patients!

 

Well, it totally worked.  I loved them and so did the family.  They were delicious and actually tasted so much like a potato chip!

 

Broccoli Chip Recipe for Phase 2 and Phase 3 of the HCG Diet

 

What you will need is pretty simple:

2 large stems broccoli
extra virgin olive oil or coconut oil or no oil on Phase 2 hcg diet
sea salt
ground pepper
 
Begin by turning your oven to 425 degrees.  Use a mandolin or slice thin the stalks of broccoli. You can peel them before hand if you choose.  I actually sprinkled mine with salt and then let them sit for 20 minutes.  Then, I rinsed them and patted them very dry between 2 towels.  Then, toss the broccoli with a little olive or coconut oil (or nothing on phase 2).  Arrange them on a baking sheet in a single layer. and roast for approximately 10 minutes, until lightly golden-tinged at edges.
 
These will not be crunchy but they sure are tasty and very healthy!
